If you’ve spent any time in Northern Virginia, you may be familiar with Firenza, the chain of build-your-own-pizza restaurants. The concept has worked so well up there that the company has opened its first Charlotte location at 9821 Northlake Centre Parkway in the Northcrest Shopping Center, close to Northlake Mall. It’s just one of 19 locations they plan to open in North Carolina over the next ten years.

Firenza specializes in made-to-order pizzas with all the toppings you want and fresh dough that’s made in house. Basically, you can customize your pie anyway you like, just like you do with sandwiches at sub shops. Then the folks behind the counter put it in the oven for you. Back in the ’90s, Kramer had a similar idea on Seinfeld but he took it one step further by allowing customers to physically assemble and bake their own pizza. As you may recall, that led to some disagreement.
