AND…………..I made them! I enjoy cooking, especially in the Fall. I saw the recipe for “Dill Pickle Cupcakes” on a website called Delish, and decided I had to give em a try. As I read through the recipe, I realized that Splenda Naturals would be perfect to use instead of sugar. Splenda Naturals has no bitter aftertaste, and no calories, so boom! Perfect! I also realized that the icing for the cupcakes contained a bit of bourbon, so I was in. Pickles, cupcakes, and whiskey…how could this go wrong?

The cupcakes came out great, but my icing was a bit thin. I think I was a little heavy handed on the bourbon. I’m always in for pickles, but I think the recipe would be better without the icing. Just the batter baked into a “pickle bread” would work for me. If you’re a pickle fan, you need to give these a try. The recipe is available here. Happy baking and eating!
