Now that it's starting to get hot, I'll cook a lot less. Many of us don't enjoy standing over a hot stove when it's 90 degrees outside. I will say that I love making pasta salads in the summer.

Yes, you have to cook the pasta, but that's only 10 minutes. Summer serves up so many different veggies, it's so easy to come up with different concoctions. I make an orzo summer salad with goat cheese, chopped walnuts, scallions, cherry tomatoes, olive oil, and fresh lemon juice. So tasty! You can add a protein to this as well. Last night, I sauteed Brussel sprouts & pancetta and mixed in a few elbow macaroni noodles. I added a bit of balsamic vinegar.......yummy!  If you're into summer pasta salad's, here are some amazing ones. Great for a quick dinner or to bring to a gathering.  Enjoy!
