There are some things in this world that people either love or hate and there's no in-between. Kale is one of those things.

I've never heard anyone say, "Kale? I could take it or leave it."

If you're a kale hater, the idea of a "kale factory" is probably terrifying. But if you love kale, Bowery Farming is like a gold mine. The vertical farm in Kearney, NJ is perfecting the process of growing kale and other plant-based foods indoors.

The concept of hydroponics isn't new, but Bowery Farming has more or less automated the process through the use of robotics. They're able to cultivate consistently better produce without having worry about variables, such as weather and availability of labor.

It's all a bit Big Brother-y, but if it leads to plentiful high-quality food at lower prices, vertical farming might be how agriculture needs to evolve. Even if it means more kale.
