In order to lighten the mood a bit during the Coronavirus pandemic, Phil and I have come up with a theme for days of the week. Each theme is related to life as we know it right now. With so much change going on day to day, we thought it'd be fun if we could all share ideas. 

Since today is Monday, it's a "MacGyver Meal Monday". So many of us are coming up with meals with ingredients that we find in the pantry. Grocery shopping is different for us now, and you can't always find all the foods you want when shopping.

On Friday I ordered groceries from Amazon, but they weren't delivered until Sunday. I came up with a tasty recipe while looking for something to cook on Saturday. I had pasta, a can of roasted tomatoes, goat cheese and some garlic and onion. Combined it was actually really tasty!

I had a 14oz can of tomatoes so I put them (undrained) into a small Pyrex along with olive oil, a minced garlic glove, and about 1/4 cup of chopped onions. I rarely measure when cooking. I stirred everything together and roasted the tomato mix on 400 degrees for about 30 minutes. I then stirred the mixture again, and cooked it for about 10 more minutes.

I emptied the tomato mix into sauce pan, and added about 1/2 cup of water. I made some pasta while the sauce was simmering. Once the pasta was cooked, I mixed a bit of it with the some of the sauce. I added a tablespoon or so of goat cheese to the top of the dish, and then finished it off with a bit of dried parsley.

Usually I don't use goat cheese with pasta, but it's what I had on hand. I was shocked at how tasty the meal was! I am definitely gonna make this again, without question. If ya whip this up, let me know how ya like it!
