90 Year-Old Woman Recovers From Coronavirus & Says Family’s Potato Soup Was Partly Responsible
When the now 90-year-old Geneva Wood was a child, her mother taught her how to make potato soup. Ever since, she’s made it for herself when she felt sick. Soup is a go-to for many of us when we get sick, and lots of us have a favorite kind or favorite recipe that we love.
Unfortunately, Wood was diagnosed with the Coronavirus in early March. Having lived a full life, declined ventilation and was expected to succumb to the illness. Days later, the hospital called in her family to say their goodbyes. Her family visited, via through a window outside her room, and asked Wood what they could bring her. She asked for potato soup.
Now, the soup did not CURE the Coronavirus but since recovering, Wood has said that her family, God, and the soup helped her to get well.
I love a good soup recipe! Since lots folks now have some time to cook, I’ve posted the recipe below. Wood’s granddaughter posted it on her Instagram account so that all of us can try it. I’m all about whipping this up!
- 1 small sweet onion
- 2 medium Russet potatoes
- milk (to consistency)
- half and half (to consistency)
- and black pepper
First, finely dice sweet onion and peel and cut Russet potatoes into bite-sized pieces.
Put the vegetables into a pot and cover them with just enough water that they are submerged.
Boil until the potato starts to fall apart and do not drain.
Add milk and half and half to the desired consistency and heat through, but don’t boil.
Add black pepper to taste.
The recipe makes two bowls, but can make more depending on how much milk or half and half is used.
