I cannot be the only one that still enjoys soup in the summer, right?! Despite the amazingly hot temps here right now, I’m still a fan of soup, especially chicken soup. It’s one of the ultimate comfort foods and right now lots of us could use a little comfort.

There are a few different recipes I use for classic chicken noodle soup. I do admit that I don’t usually make my own broth. And I only use chicken breasts. Still, my soup is always flavorful. Over the last few years I’ve found that fresh herbs really taste great in chicken noodle soup. Fresh dill and rosemary especially.

Switching up the types of noodles can make a soup taste different. I’ll make a Chicken Orzo Noodle Soup with Lemon. SO good! But, the next day, it’s almost like a stew. The orzo definitely sucks up lots of the broth. Still, the flavor is fabulous.

Country Living has ’38 Chicken Soup Recipes That Rival Grandmas’ and the recipes look yummy. Some of the recipes are a bit different from “regular” chicken soup. The Chicken Noodle Pumpkin Soup recipe looks amazing! I’m a big fan of pumpkin so I’m trying this recipe.

The Coconut Curry Chicken Soup looks good. Very different!  The Butternut Squash-Apricot Chicken Noodle Curry soup looks healthy but tasty.

For the fall, the Flu Fighter Chicken Noodle Soup recipe will come in handy. Lots of garlic which is good for the body.

Take a look at the recipes here. You may not want to rock out one of these recipes today….it’s supposed to be 96….but they’ll be good to have on hand.
