This Big Loaf O’ Breakfast Will Make You Smile

Finding a full carton of eggs in the refrigerator on a Saturday morning makes me very happy. That’s one of my favorite times to cook. And one of my favorite things to make on a Saturday morning is the Big Loaf O’ Breakfast! It combines some of breakfast’s greatest hits in one tasty package. Here’s what you need:
- 1 loaf of French or Italian bread (nothing too hard)
- 4 slices of crispy bacon or 2 slices of ham, diced
- 7 large eggs
- 1/3 cup heavy cream
- 1 cup shredded cheese (Swiss, Gruyere, or Cheddar)
- 2 green onions, thinly sliced
- Kosher salt
- Fresh ground black pepper
And here’s how you make it:
- Preheat your oven to 350°.
- Line a large baking sheet with parchment paper.
- Cook bacon until crispy. You can do it in a skillet but I actually prefer to cook bacon in the oven. It takes a little longer but it’s not as messy. Drain the bacon on a paper towel-lined plate, then dice. Using ham is even easier.
- Cut a deep V through the top of your bread loaf. Be careful not to cut all the way through the bottom. Pull out some of the bread innards to make room for the other ingredients. Place the loaf, V-side up, on the baking sheet.
- Whisk the eggs and heavy cream together in a large bowl.
- Add the diced bacon or ham, green onion, and shredded cheese. Use any cheese you like. I prefer the Shredded Swiss & Gruyere blend from Aldi.
- Season with kosher salt and fresh ground black pepper, then stir until blended.
- Pour your mixture into the bread cavity.
- Bake until the eggs are puffy and set in the center. In my oven, it takes about 35 minutes.
- Let it cool for 10 minutes before slicing. Enjoy!
