Fall is my favorite season and fall food makes me happy. So many different kinds of comfort foods in fall. Soup is one of my all time favorites! I made pumpkin black bean soup two weeks ago (yes…it’s good) and this past weekend I made an Italian Chicken soup that was full of veggies. Although it’s a classic, Chicken Noodle soup is always great to have when the weather cools off. Everyone has a recipe they love, but I have a few. I will make it relatively healthy with low to no sodium broth and I use lots of fresh herbs like dill and rosemary. When I want to make it extra comforting, I use orzo instead of noodles. The orzo takes in lots of the broth if you let it sit overnight and it’s more like a chicken noodle stew. So good! The recipe here is full of veggies which will help you stay healthy.
I’m a huge fan of Beef & Barley soup, especially when the weather gets cold. It’s a hearty soup! The recipe here is with an Instant pot but you can also make it on the stove or in a Crockpot. This recipe adds butternut squash which gives the soup a great color and taste.
There’s a recipe for Lemon-Dill Chicken Meatball soup that is on my list to try. This looks and sounds amazing! I love lemon and dill together! This soup looks like you’re going to have to have seconds. I can’t wait to try this recipe.
Since I’m trying to eat healthier, the Supergreen Orzo and Mushroom soup is also on my list to try. It’s a pretty soup, that includes some of my favorite green veggies: celery, broccoli, and spinach/kale. No question that this soup will cure what ails ya!
