For years I've heard about chocolate cake made with mayo. I've never tried it, but from what I've heard it helps to make the cake moist. When I saw the picture of chocolate cupcakes on Yahoo, I had to stop and check out the recipe. And the recipe calls for mayo.

Looking at the cupcake picture lead me to an article about "The Mayonnaise Cookbook." Chef and founder of the Slight Kitchen Werk blog Erin Isaac, is the author of the book The Mayonnaise Cookbook: 50 Savory and Sweet Recipes Starring the World's Best Condiment. All the recipes include mayo.

Isaac believes that mayonnaise isn't just something you slather on sandwiches. It can be incorporated as an ingredient in a wide range of dishes. Now, I'm not sure if Isaac is a Duke's Mayonnaise fan but I know in our area, it's king!

The Chocolate-Mayo Cupcakes show mayo’s versatility. The recipe takes advantage of mayo’s eggs and oil to create a rich cake batter. I want to try them to see how and if the mayo makes a difference. I love cupcakes and chocolate so I'm all about this!
