Pot Pies Are The Perfect Comfort Food When It’s Cold
A few weeks ago on my Facebook page, I mentioned how I wasn’t a fan of 75 degree weather in January. Mother Nature must have seen that post cause she definitely brough the winter weather to us! There’s still snow and ice on the ground from last weekend’s storm and it looks like we may see some more winter weather this weekend. When the icy weather shows up, comfort food is king!
There’s nothing better than a hot comfort meal when the weather is cold. Last weekend I made a white chicken chili that was yummy. This weekend I’m thinking of making a pot pie. I love pot pies! Chicken pot pie is the most popular, but you can make so many other types. If chicken is your favorite, I have an amazing recipe. It’s Ina Garten’s recipe for “Chicken Stew with Biscuits” and it’s out of this world! It takes some time to make but trust me, it’s worth it! Roasting your own chicken is key. I’ve made my own biscuits and I’ve used canned biscuits and there isn’t much difference. I’d go with the canned to save some time.
If you’re looking for something other than chicken, MSN has some options for you. There are a number of recipes from different sites and they all look tasty! The ‘Beef & Guiness Pot Pie‘ may be the one I make this weekend. The pie is filled with tender beef, mushrooms, potatoes and onions. And obviously the Guiness gives it another layer of flavor. I’m not much of a baker so I buy pre-made pie shells, but of course you can make your own.
The ‘Curry Turkey Pot Pie‘ looks delicious as well. A bit of curry in a dish is great when it’s cold because it’s such a warming spice. I make a pumpkin black bean soup that calls for curry and it’s one of my favorite soups. This is a pie I’m making at some point this winter.
If you aren’t a meat eater, the recipe for ‘Vegetarian Pumpkin Pot Pie’ is for you. Many think of pumpkin pie when pumpkin is mentioned, but it’s really a versatile ingredient. You can make excellent savory dishes with canned pumpkin. This pie looks yummy and healthy. It’s got lots of veggies and if you don’t want to use pumpkin, you can use any type of squash. Butternut squash would be great in this dish.
