OMG! My 4th of July was spent feasting and I don’t even know where to start! So, last week my doctor gave me a shot of prednisone because I was having a Lupus flare really bad. I was having a hard time moving my right hand. The swelling was bad and the pain was awful! The doc gave me a shot of prednisone and then put me on oral prednisone.

I’ve taken prednisone many times. Usually, I don’t have any issues when I’m on it. If I take it too long, I can get mean, but it’s never caused me many problems. This round was different. Maybe it’s because I got the shot, and usually I just take the oral meds. Sleeping has been difficult, and I’ve been sweating like crazy at night. And I mean more than my usual “cancer meds, menopause” sweating. And then there’s the eating.

Saturday my appetite got nuts! I went to the farmer’s market early Saturday morning and loaded up on fresh veggies and fruit. Then I went to the grocery store for stuff for the week. And I think I’ve eaten half of the food I bought already!

For dinner Saturday night I made steak kabobs, with pepper and onion and some fresh corn on the cob. I can’t remember the last time I made beef kabobs! I think I was married, which means it’s been over 10 years. They came out great! I don’t have an outside grill since I live in an apartment, but I have a Cuisinart Griddler which does an excellent job! Really good indoor grill if you’re in the market for one.

Saturday night I discovered that fresh blackberries on top of strawberry frozen yogurt in a waffle cone bowl with a tad of blueberry syrup is the best thing ever! At least, it tastes that way right now. I purchased Lineberger’s Farm blackberries from the farmer’s market, and I’ve never had any so good! I love them and the dogs love them! But I’m telling ya, on top of some frozen strawberry yogurt…delicious!

I also discovered this weekend that Sun-Chips dipped in plain Siggi’s yogurt is delightful! The yogurt is like a dip, but with protein! Of course, I mention the protein trying to make myself feel better about eating so much. At least it’s kind-of healthy.

If you’re a fan of tomatoes, then you know this is the time of the year for them. I’m a huge fan of heirloom tomatoes, and I found some on Saturday at the farmer’s market. Here’s my new favorite snack/meal with fresh tomatoes: get some Publix Tuscan Roasted Garlic Bread (find it in their bakery), toast a few slices and then add goat cheese to the toast. Top with some fresh tomato slices, salt, pepper, and chives. It is absolutely yummy! I am sure I’m going to end up back at the farmer’s market by Tuesday. The tomatoes are just perfect!

Monday, I whipped up a Greek Pasta salad. This is something I’ll make and eat on all week, or until it’s gone. And being on these steroids, it probably won’t last the week! I used Ditalini Pasta instead of Orzo which is what I usually use. I added red pepper, red onion, cucumber (farmer’s market), tomatoes, Castelvetrano Green olives (very crispy), kalamata olives, fresh spinach leaves, fresh parsley, and feta cheese. For the dressing I used olive oil, fresh lemon juice, salt, pepper, and oregano. I also added just a spoonful of vegetable oil.

This pasta salad may be one of the best I’ve made. Great recipe to bring to a cookout or a party. It’s easy to make and has amazing flavor!

Now, I’m a decent cook but admittedly, I may think everything I had this weekend was insanely good because of the steroids. I didn’t see any fireworks for the 4th, but my scale saw some big numbers! If you try any of the meals I made this weekend, let me know!
