Most Popular Southern Living Fall Recipe Is Easy To Make And Yummy
Fall is my favorite time of year! The weather is cooling down and fall foods are here. Cooking is something I do often, and fall and winter recipes are what I love the most as far as food goes. Summer is awesome for fresh veggies and fruits, but fall means soups, stews, and comfort foods. Southern Living’s most popular fall recipe of all time is something that’s delicious and easy to make.
According to Southern Living, their White Chicken Chili recipe is one of the most popular recipes from the magazine. Chili is perfect when the weather cools down, and I like chili, but as I’ve gotten older I prefer a white chicken chili. I’ve made this recipe and I can tell you that it’s easy to whip up and so good!
Fix It And Forget It
This recipe is one that you can prepare in your slow cooker and not worry about it until it’s time to eat. It’s a great meal for busy folks since you can set it up before heading out to work, and it’s ready when you get home. This chili recipe is also great for football Sunday! You can pair this dish with tortilla chips, cornbread, or a nice crusty bread with some butter. That’s my personal favorite.
Groceries at the moment are crazy expensive, but this dish, with all the ingredients, will cost under or around $20. Southern Living uses chicken thighs but I substituted them for chicken breasts, which do cost a bit more. Chicken thighs are more flavorful, but usually I have chicken breasts in the freezer, so I use those.
Toppings are totally up to you! I’ve used avocado, which is yummy, but I’ve also added cheese. For me, it’s cheese or sour cream, not both. And in place of sour cream, I’ll use plain Greek yogurt since I usually have it in my fridge. Whatever your family enjoys, throw it on top. If dried beans aren’t your thing, I’ve added canned beans and it’s still delicious!
SOUTHERN LIVING’S WHITE CHICKEN CHILI
- 1 3/4 lbs. skinless chicken thighs, trimmed and cut into 1 1/2-inch pieces
- 1 (16-oz.) pkg. dried navy beans, soaked overnight according to package directions, drained, and rinsed
- 5 cups chicken broth
- 1 large sweet onion, chopped (about 2 cups)
- 2 (4 oz.) cans diced spicy green chiles
- 1 (1.25 oz.) envelope white chicken chili seasoning mix
- 2 tsp. ground cumin
- 2 tsp. minced garlic
- 1 tsp. kosher salt
- Stir together chicken, beans, broth, onion, green chiles, chili seasoning mix, cumin, garlic, and salt in a 5- to 6-quart slow cooker. Cover and cook on HIGH 5 to 6 hours or LOW 8 to 10 hours until beans are tender. Serve with toppings.
