Charlotte’s Cowfish Plans $1M Makeover While Keeping Doors Open
Beginning March 31, 2025, the Cowfish Sushi Burger Bar in SouthPark will begin a $1 million renovation. The restaurant will remain open throughout the four-week project.
After 15 years without major updates, renovations are needed. “I think to stay relevant you have to stay current. It’s a fair ask,” Alan Springate told What Now Charlotte.
With a new five-year lease at 4310 Sharon Road, construction teams will tackle the project in phases. “We’re literally going to split the restaurant in half. It will be done in a way that most guests won’t feel it,” Springate said.
While keeping its eye-catching 750-gallon aquarium, the venue will add outdoor amenities and seating. Guests will soon be able to play bocce ball and shuffleboard on artificial turf.
Interior upgrades will include hardwood tables, contemporary lighting, and walls painted in green and gray shades. They’re adding a digital display to maintain their signature artistic vibe. The updates come after a small dip in sales during 2024. Their sister spot, eeZ Fusion and Sushi, saw revenue climb 20% following similar improvements worth $800,000.
Since 2010, the restaurant has earned national recognition from food critics. It grabbed the #6 spot among American burger restaurants last year. The News & Observer named it one of Charlotte’s top 20 sushi spots in 2024.
By combining burgers with sushi rolls, they’ve created something unique in Charlotte’s food scene. The renovations aim to keep regular customers happy while drawing in newcomers.
