What The Food: Watermelon Chicken
This is sure to drive Mel up a wall. She hates food mash-ups almost as much as food “hacks.” This recipe for watermelon chicken might qualify as both.
It started as an April Fool’s joke in The New York Times, but the recipe actually works. The idea is to bake a whole seasoned chicken inside of a hollowed-out watermelon, which results in a moist, tender bird that doesn’t taste at all like watermelon.
The demo below even includes a way to make some gravy from the juices left behind once the chicken is removed from the melon. Unfortunately, this recipe takes a long time to prepare but it might still be worth trying. You had better hurry, though. The good watermelons are almost gone.
