Dishin’ With Debbie-Sloppy Mac O Lanterns
I’m always looking for new ways to present classic faves. I love sloppy joes, and I also love mac and cheese. I think this is the perfect combo of the two, stuffed inside a cute jack o lantern pepper oozing with cheesy goodness. Take these treats to your Halloween party, and the only trick will be keeping them from disappearing!
Ingredients:
Mac and Cheese: Or just use your favorite store bought to make this a really quick meal
8 oz. elbow or small shells pasta
1 cup heavy cream
3 ounces cream cheese
1 teaspoon onion powder
1 cup cheddar
1/2 cup smoky gruyere
2 slices American cheese cubed
salt and pepper
Directions:
Warm cream in saucepan over medium high heat to a low boil. Add seasonings, cream cheese melt until smooth. Add other cheeses, and stir for a thick gooey sauce. Add pasta that has been cooked according to package directions.
Sloppy Joe:
1 pound lean ground beef
1 tablespoon tomato paste
1/3 cup bbq sauce
1/4 cup ketchup
1/8 cup worchestershire
1/8 cup low sodium soy sauce
Brown meat until cooked through. Stir in tomato paste. Coat the meat. Add bbq sauce, ketchup, worchestershire and soy. Bring to a boil, reduce heat and simmer for 5 minutes.
Peppers:
Cut tops off. Remove seeds. Use a paring knife to carve faces. Place on baking sheet in 400 degree oven for about 5 minutes to soften a bit. Remove and allow to cool slightly. Combine mac and cheese with sloppy joe mixture. Stuff the peppers. Top with additional cheese if desired. Pop the lids on and return to oven for another 5 minutes or until gooey and melty.
