Dishin’ With Debbie-Homemade Drive Thru Breakfast
These little sandwiches are a familiar breakfast item at the drive-thru. But, you can make them at home and store a bunch in the freezer so you can grab them to reheat on a busy morning. It’s a great way to make sure the kids have a hearty breakfast on the go before school.
Ingredients:
Eggs ( as many as you are preparing)
English muffins
Cheese slices
Assorted prepared meats (Canadian bacon, ham, bacon, sausage patties)
Directions:
Preheat oven to 350. Spray ramekins or jumbo muffin tins with non-stick spray. Crack one egg in each ramekin. Break up yolk and beat slightly with fork. Add salt and pepper. Place ramekins on baking sheet. Bake in oven about 15 minutes, until eggs are set. Remove and allow to cool slightly. While eggs are cooking, toast english muffins if desired. Remove eggs from ramekins and begin building sandwiches with an egg on each muffin, cheese, and desired protein. Wrap in plastic wrap and put in large zip bag in freezer. When you are ready to reheat, just unwrap a sandwich, wrap in a paper towel and place on a plate in microwave. Heat at 50% power for about a minute. Then flip over and heat at high power for about a minute. These times may vary depending on which protein is in the sandwich. Just be careful not to overheat or the bread will become hard. Sometimes, you may have to disassemble the sandwich after defrosting and heat the egg or protein longer than the bread.
