Mel’s MacGyver Meal Monday: Mediterranean Chicken Salad
Yet again this weekend, I whipped up a meal with some ingredients that I had in the fridge. I didn’t use a recipe for this meal, I just made it up and luckily, it came out darn tasty!
I’ll be honest, I was actually surprised that this came out as well as it did! I made Mediterranean chicken salad on Saturday and it’s really good!
These are the ingredients I used:
- Chicken breasts (however many you need…I used two)
- Red onion
- Cucumber
- Celery
- Kalamata olives
- Grape tomatoes
- Garlic
- Goat Cheese..6 oz
- Honey
- Mayo
- Salt, pepper, oregano
I cooked two chicken breasts using a dutch oven. I put some olive oil in the dutch oven, warmed it up, and then browned both sides of the chicken before putting it in the oven. I put some salt, pepper, and oregano on the chicken while browning it. Once both sides browned, I put the cover on the dutch oven and baked the chicken for 30 minutes at 350.
The chicken falls apart when you cook it this way. While the chicken cools, cook the tomatoes. Put them in a bowl with one garlic clove minced, and toss a bit of olive oil on them to coat them. Cover a baking pan with aluminum foil, and toss the tomato mixture on the pan. Bake for 20-30 min on 400.
Chop the celery, cucumber and red onion…I just went by sight, put in as little or as much as you like. Then chop up the Kalamata olives…same….put in what ya like. Put all the veggies in a big bowl. Then tear apart or cut the chicken. Once the tomatoes are done, add those to the bowl as well.
Add all of the goat cheese to the bowl, one tablespoon of mayo, and a drizzle or two of honey. Mix everything together and chill for about an hour. Then boom, done! Put on your favorite bread for a sandwich or have alone with some tasty crackers.
