Recipes For Those Leftover Easter Eggs
With the pandemic still going your Easter gathering may have been a bit smaller this year. That doesn’t mean you don’t have leftover eggs though! Every year we look for something to do with those leftover eggs….besides just eating them. If you’re like me and you hate wasting food, here are some recipes for those eggs.
Woman’s Day has 33 different recipes for all those eggs in your fridge. Obviously you can make deviled eggs, and they have a few different varieties of those, but there are lots of other tasty meals to whip up. Some folks enjoy eggs in a tossed salad. I’m not one of those people. I do like egg salad though! Not sure how you make yours, but I put Dijon mustard in mine and lots of pepper. I add mayo too but I’m not a fan of too much mayo. I like just enough to make sure everything is combined.
The Egg Salad with Capers, Red Onion, Lemon, and Dill recipe looks yummy. A chunky take on egg salad and I think the dill would add a freshness to it. Potato salad is a staple in the South, especially in the spring and summer. True Southern potato salad usually includes egg. There’s a recipe for Tangy Potato and Egg Salad…combining two of the South’s loves together. It looks tasty! I love using red potatoes in potato salad.
When I make my egg salad it’s pretty plain. I like my eggs smashed until it’s a fine consistency and then I add mayo, Dijon mustard, a dash of salt and pepper. Perfect for a sandwich with lettuce, or for crackers or Melba Toast or bagel chips. I never thought about adding caramelized onions to an egg salad sandwich. Might be interesting.
