The Tastiest Tomato Recipes For Summer
Maybe it’s a Southern thing, but tomato season makes me happy. One of the best things ever is a fresh tomato sandwich with mayo on white bread! It’s a must-have in the summertime. I’m a huge fan of tomatoes and when they’re in season, there are so many recipes that are easy to make. And a total bonus, tomatoes are good for you! Score!
One of my favorite things to make is roasted cherry tomatoes and goat cheese. I’m sure somewhere online there’s a recipe for this, but a few years ago I whipped this up on my own and fell in love with it. I’ll roast cherry tomatoes in olive oil and salt. Usually I cook them at 400 degrees for about 15-20 minutes. I watch them and when they begin to burst, they’re done. Then I put the hot tomatoes into a bowl and mix in a log of goat cheese., along with a dash of olive oil and salt and pepper. The hot tomatoes melt the cheese and you get a delicious spread that goes great on fresh crispy bread. It’s also a tasty topping for grilled chicken. A warning though, this is hard to stop eating!
Fried green tomatoes are also on my favorites list. I’ve never tried to make them but if I see them on a menu, I get them, especially this time of year. They’re great solo or on top of a salad. Southern Living has 75 tasty summer tomato recipes and fried green tomatoes made their list.
Tomato Gravy is the first recipe that is on the list and I’ll admit I’ve never tried it. Hot tomato gravy on fresh biscuits sounds absolutely delightful! This is a recipe I’m definitely going to try.
The recipe for Tomato, Cheddar, and Bacon Pie also looks yummy! It calls for different kinds of tomatoes, giving the pie a gorgeous color. Heirloom tomatoes are perfect for this recipe! They’re my favorite in the summer. They’re so flavorful.
Years ago, when I lived in Columbia, S.C., I went to The Gourmet Shop often in Five Points. They make the best chicken salad! I’d always order the Tomato Chicken Salad. They’d take the chicken salad and fill fresh tomatoes with it. Totally a recipe for a light summer meal! Southern Living’s chicken salad recipe is different than mine, so I say make the recipe you love and then skip the bread and stuff fresh tomatoes.
Watermelon is another summertime delight and I’ll admit that I’ve never tried this combo. I want to give this a shot; it’s a Marinated Tomato and Watermelon Salad. The recipe calls for fresh herbs and goat cheese and I have a hard time saying no to both.
