The concept of hydroponics isn’t new, but Bowery Farming has more or less automated the process through the use of robotics. They’re able to cultivate consistently better produce without having worry about variables, such as weather and availability of labor.
It’s all a bit Big Brother-y, but if it leads to plentiful high-quality food at lower prices, vertical farming might be how agriculture needs to evolve. Even if it means more kale.
