Dishin’ With Debbie-Grilled Spicy Pierogy Mexican Street Corn
My love of Mrs. T’s Pierogies continues! They are so delicious and versatile, and I have found many ways to incorporate them into incredible recipes. The light and fluffy whipped potatoes, cheeses and assorted fillings tucked into the pasta pockets are always a hit with the whole family. This week I discovered this gem of a recipe. If you’ve ever had Mexican Street Corn you already know how many wonderful flavors are wrapped up into that. This recipe brings those flavors together with Mrs. T’s Pierogies to elevate the dish to a whole new level. With the charred flavor of the grilled corn and pierogies, the brightness from the slightly tart dressing, the burst of flavor from the fresh lime, jalapeno, scallions and cotija cheese, it’s perfect for warm summer days ahead. This is a grilled dish that can be prepared outdoors, or just use an indoor grill pan as I did. I hope you enjoy this dish as much as I did.
