Have You Ever Had A Watermelon Burger?
I don’t know why, but I haven’t had a good watermelon this summer. For some reason, the ones I’ve tried haven’t been as sweet and flavorful as I’d expect. I guess I can just chalk it up to 2020 being such a letdown. Or maybe I just need to throw my watermelon on the grill.
Grilled pineapple and peaches have been popular for a while, and now watermelon burgers are becoming a thing. The Takeout has a recipe for Grilled Watermelon Burgers with Goat Cheese and Charred Orange-Fennel Gremolata. It looks like something that may have to go on my grill this weekend, although I might skip the goat cheese.
Here are the ingredients you’ll need to make 4 watermelon burgers:
- 1 small orange
- 1 cup roughly chopped fennel fronds
- 1 – 2 fat garlic cloves
- 2 Tbsp white wine vinegar
- ¼ tsp kosher salt
- Freshly cracked black pepper
- 4 slices of watermelon, 1 ½” thick
- Olive oil
- Cheese—preferably chevre, sheep or goat
- 4 square ciabatta buns or a baguette cut into sandwich-size portions
