Dishin’ With Debbie-Beef Satay Skewers With Peanut Sauce
We can’t wait for grilling season! But, today we decided to fire up the indoor grill for some delicious beef skewers that we’ll dip into an irresistable peanut sauce. Yep…food on a stick!
Ingredients:
1 pound skirt steak (cut into strips across the grain)
2 cloves garlic, grated
2 tablespoon fresh ginger, grated
2 tablespoons fresh lemon juice
2 tablespoons soy sauce
1 tablespoons chili paste
wooden skewers soaked in water
optional chopped scallions or fresh herbs for garnish
Peanut Sauce:
3-4 tablespoons creamy peanut butter
2-3 tablespoons soy sauce
1 teaspoon sesame oil
1-2 tablespoons rice wine vinegar
1-2 teaspoons sriracha sauce (more if you like it hot)
pinch of red chile flakes
Directions:
In glass bowl, stir together marinade ingredients. (garlic, ginger, lemon, soy, chili paste) Add steak strips and toss to coat. Cover and refrigerate for about 2 hours or up to overnight. Mix together peanut sauce ingredients, adjusting amounts to taste. Set aside for serving. Remove beef from fridge and let come to room temp for about 30 minutes before cooking. Thread steak onto skewers that have been soaked in water. Place on grill for about 2-3 minutes per side, or until desired doneness is reached. Sprinkle with chopped scallions or herbs, if desired. Serve with peanut sauce on the side.
