One Of The Best Brunch Spots You’ll Find In North Carolina
I’ve been wanting to try this relatively new brunch spot ever since it opened a new location a few months ago. And, I deem it one of the best brunch spots you’ll find in North Carolina. It’s Ruby Sunshine’s newest location on Johnston Road in Ballantyne. Conveniently located near I-485 in Charlotte, I pass by Ruby Sunshine every day. And, I finally had a chance to try it.
What Is Ruby Sunshine?
If memory serves me correctly, the spot that houses the current Ruby Sunshine used to be a Mexican restaurant. But, when you step inside, it’s unrecognizable as it once was. It has a completely new look. And, they bill themselves as “crazy about brunch.” The menu describes the concept as born out of an undeniable spirit and soul of New Orleans. And, when they say they celebrate brunch every day, they mean it. I was blown away.
The Beignets
Of course, when you visit a spot that highlights the spirit and soul of New Orleans, you must try the signature Beignets. In fact, the waitress alerted us to the seasonal special Pumpkin Marshmallow Beignets. And, I’m sooooo glad she did. They were outstanding. They arrived as four good sized New Orleans-style beignets with pumpkin cheesecake, praline sauce, marshmallow creme topped with spiced candied pecans and powdered sugar. The beignets were warm and crispy, sugary doughnuts that were soft and fluffy on the inside. And, the pumpkin cheesecake underneath was worth digging into! It wasn’t overpowering pumpkin, just enough. And, there’s the marshmallow creme on top with the praline sauce. All I can say is, “wow.”
The Bayou Shrimp Bennie
My husband ordered the Bayou Shrimp Bennie. It was fantastic. It arrived as shrimp in pork tasso and Creole tomato sauce. The sauce was amazing. There were two poached eggs and fried green tomatoes on a buttermilk biscuit to complete this delicious dish.
Biscuits and Gravy With Sweet Heat Fried Chicken
I decided I wanted a little sample of everything. So, I got the Biscuits and Gravy. It was fluffy biscuits in fantastic sausage gravy with eggs and smoky applewood bacon. I decided to add fried chicken in the sweet heat hot honey sauce. I couldn’t stop eating. It was the perfect mix of salty, sweet and spicy. I did bring some of the biscuits and chicken home! It’s a lot. But, it’s so good.
